January was Mexican Month for me. Here is my interpretation of
Marcela Valladolid's Chile Rellanos. Pablanos stuffed with Monterey Jack and Oregano and roasted and batter dipped and fried with a nice chunky tomato spice spooned over. Absolutely awesome.
